What is an Art Basel studio dinner?

It is a four-course dinner I cook in your home, villa or rental during Art Basel Miami Beach, December 4–6, 2026. Your table becomes my studio: the tartare is assembled, the tomahawk carved and the crème brûlée touched with the torch in front of your guests. It is for hosts who want a private evening after the fairs.

What is on the sample menu?

Four courses, from cold and bright to the crack of caramel. Your final menu is written for your table.

Ahi Tuna Tartare: Hand-Cut Premium Tuna with Avocado, Citrus Ponzu, and Crisp Wontons, assembled at the table — private chef Marina Staver, Miami

1 · Assembled at the table

Ahi Tuna Tartare: Hand-Cut Premium Tuna with Avocado, Citrus Ponzu, and Crisp Wontons

Made with the freshest tuna and assembled at your table, so the citrus stays bright and the wontons stay crisp.

Roasted Bone Marrow, served with charred sourdough, parsley and capers, chili oil, lemon zest, and sauce, rich and warm — private chef Marina Staver, Miami

2 · Rich and warm

The bones arrive hot, ready to spread over charred sourdough. Capers and lemon zest balance the richness.

Tomahawk Steak, Charred to Perfection, with Oven-Roasted Vegetables, carved at the table — private chef Marina Staver, Miami

3 · Carved at the table

Grilled over an open fire to the doneness you like and carved in front of you, so you see the center the moment it is cut.

Crème Brûlée: Classic Vanilla Bean Crème Brûlée with a Flawless Caramelized Sugar Crust, a last touch of the torch — private chef Marina Staver, Miami

4 · A last touch of the torch

At the table I finish it with the torch, and the crisp caramel over cool vanilla custard cracks under your spoon.

Why is it built this way?

During Art Basel week, your guests spend their days looking at finished work. This evening shows the work being made. The tartare comes together, the tomahawk is carved and the torch touches the caramel in front of you: cold and bright, then rich and warm, then the fire-grilled crust of the steak, then the crack of caramel.

Every dish on this menu is one I have already cooked for private dinners. For Art Basel week, I bring them to your table as an open studio.

What does my work look like at a real party?

These are real moments from a daytime party I cooked in a private home this spring. The menu was different from this one; the way I finish every platter by hand is the same.

Beet salad with walnuts and arugula
Spinach tart with rosemary and pink hydrangeas
Roasted peppers, zucchini and cherry tomatoes
Watermelon bowl with mozzarella, berries and mint
Grilled eggplant rolls with arugula
Crispy beef tacos with cilantro and lime

Art Basel dinner with a private chef — frequently asked questions

Can I hire a private chef for a dinner during Art Basel Miami Beach?

Yes. As a private chef in Miami, I cook in homes, villas and rentals across Miami-Dade, Broward and Palm Beach, including during Art Basel week. I bring my assistant, cook on site, serve each course and leave the kitchen clean. The earlier I have your date, the easier it is to plan sourcing.

How much does a private chef cost for an Art Basel dinner in Miami?

From $200 per guest plus groceries, $2,000 event minimum. Your all-in quote comes within 24 hours.

Does everything happen at the table?

The moments that matter do. The tartare comes together at your table, the tomahawk, grilled over an open fire, is carved in front of you, and the crème brûlée gets its final touch of the torch next to your guests.

Can the menu be adjusted for allergies or dietary needs?

Yes. I ask about allergies and sensitivities before I finalize the menu, and I adjust the courses with you. Gluten-free and dairy-free guests are a normal part of my work.

Is this the full menu?

It is a sample. We build your final menu together when we plan your evening, around your guests and your date.
