What does a Christmas dinner with a private chef look like?

Christmas is a long, slow day, so the dinner moves at the family's pace. I cook in the kitchen and bring each course to the table. When the last plate is cleared, the kitchen is clean.

December 25: the table, the flowers, the tartare and the yule log.

What was on the menu?

This is the menu card that lay on every plate. Your final menu is written for your table, around your guests and your traditions.

  • Appetizer — beef tartare
  • Seafood — with scallops, crisp greens and citrus
  • Wagyu Steak — perfectly seared Wagyu, served with an elegant array of baked seasonal vegetables
  • Chocolate Yule Log — a decadent roulade of rich chocolate mousse, rolled in a velvety sponge

How do I set a Christmas table?

Table setting and flowers are part of every dinner I cook. For this Christmas I set a white cloth, red glasses with candy canes, amaryllis and pomegranates, and a gingerbread cookie on every menu card.

What came to the table?

The dinner opened with beef tartare, followed by the seafood course with scallops and the seared Wagyu. The chocolate yule log closed the evening.

What do I cook for Christmas Eve?

One of my Christmas Eve menus had fourteen dishes for one long, warm evening: popovers with red caviar, tuna carpaccio, duck breast with a pear poached in red wine, two winter salads, pork roulade with sage and apples, duck leg confit with chestnut sauce, then chocolate cake and a yule log.

The acidity of fruit runs through the whole menu: pear poached in wine, orange, tart apple. It refreshes the palate between rich bites, so the last course tastes as bright as the first.
