What does a Thanksgiving dinner with a private chef look like?

On November 27, 2025, I cooked this Thanksgiving dinner in a client's home. The photos on this page are from my kitchen that day; the menu card shows what was served at the table. The turkey was brined, slow-roasted and served with its natural jus. Next to it went a Chilean sea bass with nut sauce, seafood in my signature sauce, and the classic sides.

Thanksgiving, November 27: the table, the turkey, the last touch and the sides.

What was on the menu?

This is the menu card that stood on the table that night. Your final menu is written for your table, around your guests and your date.

  • Thanksgiving Salad — baby greens, roasted squash, nuts, cranberry vinaigrette
  • Vegetable Pie — golden crust filled with vegetables
  • Roasted Thanksgiving Turkey — brined, slow-roasted, served with natural jus
  • Seasonal White Fish — fillet of Chilean sea bass with nut sauce
  • Seafood in Chef's Signature sauce — pan-seared, finished in Chef's sauce (includes shrimp and crab)
  • Classic Turkey Gravy — rich reduction from house-roasted bones
  • Thanksgiving Herb Stuffing — rustic sourdough, aromatic herbs, oven-baked
  • Cranberry Sauce — house-made with orange and wine
  • Whipped Potato Purée — silky and buttery
  • Roasted Carrots with Cumin — glazed, lightly spiced
  • Charred Brussels Sprouts — roasted, sea salt, olive oil, poppy seeds
  • Sweet Potato Gratin — cream-baked layers, golden crust

Why are the sides built as a set?

A Thanksgiving plate is mostly sides, so I build them as a set. The base is rich and comforting: stuffing, gravy, mashed potatoes, sweet potato. Against it I put sharp counterpoints: tart cranberry sauce and slightly bitter greens. Acid and bitterness keep the palate from tiring of the rich notes, so the last bite tastes as clear as the first.

What happens in the kitchen on the day?

I bring my assistant, cook everything on site and serve it hot. The turkey goes into your oven hours before dinner, and the sides come together around it. When the evening is over, the kitchen is clean.

And dessert?

My Thanksgiving menus always end with dessert, set out for the guests once the main table is cleared.
